Almond Cookies
Here's the recipe:
Almond Flour - 2 1/2 cups
Coconut Flour - 1/2 cup
Sea Salt - 1/2 tsp.
Baking Soda - 1 tsp.
Coconut Oil - 1/4 cup
Maple Syrup* - 1/4 cup to 1/2 cup
Whole Egg - 1
Egg Whites - 2
Vanilla Extract - 1 tsp.
Here are the instructions:
- Preheat oven to 375 degrees.
- Grease cookie sheets with a little coconut oil.
- Combine the flours, salt, and baking soda in a bowl. Set aside.
- Soften the coconut oil by warming it in a double boiler,
or in a makeshift one (a bowl in a saucepan filled with water).
- Combine the coconut oil, the maple syrup*, the whole egg, the egg whites, and the vanilla extract.
- Mix by hand or mixer for a few minutes.
- Add the dry ingredient mixture a spoonful at a time, mixing as you do.
- Roll into balls, and press down with a fork or flipper. (My favorite tool is a wooden flipper with slits, I think it gives it a nice pattern).

*Maple Syrup - 1/4 cup for "biscuit like" treats, 1/2 cup if you want something REALLY sweet.

"I want a cookie," I said. But my nutritional restriction list is just a little bit lengthy, so the endeavor of baking cookies presents a challenge for me. Also, I don't much enjoy baking, especially when I have to invent the recipe... and do the dishes, I very much dislike doing dishes. I thought cookies were out for me, I was so tired of trying to figure them out, and I don't really crave sweets that often, so I thought I'd be fine. But recently, I REALLY wanted a cookie. Strange, but I decided to give it another go.
And I lurve these cookies! Truly, they are more like biscuits, not too sweet at all, perfect for my afternoon tea, or glass of wine. And I received a pleasant surprise (Squeamish humans, look away, for your safety, do not continue reading), a pleasant surprise, they were the best thing I ever could have added to my menu. Years of struggling with regularity has had me try all sorts of remedies, but to my great surprise, cookies were the final piece to the puzzle. I hope you enjoy them as much as I do. (Pairing them with a glass of red wine is my favorite!)
